In the US, land was pretty much given away to whoever wanted to farm the fucking thing, this meant more land was actually farmed, the land usage was more effective and crops grown more diverse. The wealth increase for a larger segment of the population is the most important factor, of course.

Sweden had the same problem until the late 19th century, and didn't ecover from it until after ww2. A system of few, rich aristocracy and landed gentry while the majority lived as poor tenant farmers, this is no way to make society as a whole proper.

another big reason is the culture of paternalism and corruption, disorder and disdain for law that concretized during most of our dictatorships, the never ending drug war in which many of our countries have spent decades fighting on. the corrupt drug market system infiltrates the society in some of the countries

the only reaosn climate is relevant, is because jungles are ungoverned areas. many capital cities of south america are in places with somewhat cold climate
