There is very little difference when using systemd stage 3. If you consider pacstrap the more intelligent way, you really should kill yourself.
Also, Gentoo provides better config management and provides more flexibility in configuration.

Funtoo. It's built on Gentoo but it's extremely user-friendly. And it has the best support for games, hence the name "fun"too. Probably the best noob Linux distro with the absolute best support for games. I have yet to try a Windows game that did not run on Funtoo.
Is deb really the easiest and most stable next to ubuntu?

Debian. The customizability of gentoo isn't worth all the time spent fixing your system when something breaks.
OpenRC is nice though.
