Pretend that I have a setup like pic related.
If PC #1 and PC #2 both decided to download a large file from the WAN at the same time. Would they both get 1Gbps speeds? Or would they both get 0.5Gbps?

Depends on the speed of the bottlenecked part. If you really have a 1 Gb/s internet connection then yes, it'll bottleneck. If it's below 500 Mb/s (in this case) then it won't.
