While you're right in assuming there is only one manufacturer (Excluding some license agreements here and there no doubt), the construction of the movement remains the same, but the component quality varies wildly, and to show the difference in grades, each grade is thus decorated to a different, well, grade.

I don't think it will be cheaper, but you do get to select all the parts yourself, and it's fun. Building a flieger is probably easier than building any other kind of watch since there is a wide selection of dials and hands for those. Also ickler makes a really good case for 2824/2836 fleigers. I think they have a 2892 case as well which is even thinner than their 2824/2836 cases. Another advantage of building your own is you can cheap out on certain things, for example you can buy a seagull st2130 movement instead of a 2824.

The alpinist really is a beast of a watch with 20ATM, sapphire and diashock, its specs are better than many divers. I don't know who's the guy at Seiko who thought a watch meant for mountaineers had to be this tough, but bless this guy. So it's really about aesthetics, and in this case, about the strap.
The alpinist is sexy af and looks great in any situation including a suit, but the combination of silver, gold and green is as awesome as it kills your strap options. So I hope you like dark brown leather because it's all you can put on it, aside from maybe shark mesh, and maybe a foliage/green/olive NATO, maybe.
Divers have a more limited palette of colors, generally grayscale, and thus can accomodate a near unlimited selection of straps, whether bracelets, leather, NATO, fabric, or silicone of all colors.
If I had to choose, I'd pick a diver just because it'd give me more options, and then I'd get an alpinist because I want both. But diver first.

You probably have a nickel allergy, which is somewhat common. A nato, zulu, or perlon strap covers the back of the watch and keeps it off your skin, but your best bet is titanium as long as you make sure the case back is not steel. Generally this is only a problem with cheaper watches though as higher grades of steel have less nickel.
