In order to have non-identity-death TG, the brain mostly has to be intact. Male/female sexuality has a lot to do with brain development, which is why hormone therapy on younger people (while the brain is far, far more plastic) affects how their tastes and such develop so much more than adults on the same thing.

So, if you TG someone,what are you going to do, directly modify their brain, too, but ONLY modify the parts of it that deal with sexuality? Sexuality is as much psychological as it is biological, it's conceptually impossible to just "Change someone's sexuality" without fundamentally changing their personality and view into the matter. I like anything from a sweet story where a character gets gender bent and then falls for a boy to stories where the some guy's entire reality is ripped from him and he slowly becomes becomes the a cute girl even mentally. A well-executed identity death can be a great climax for stories like the latter. Anything in between is great too, like some guy becoming a girl with another personality but with his memories intact. Slow mental transformations are great. I'm especially fond of scenarios that utilize reality changes well. The resulting girl should be cute.

In general, the transformation should not be reversible in the end. Voluntary/reversible transformations with no twist are boring. Stuff like clothing transformation makes me diamonds.

I've always liked the idea of a global tf scenario where everyone is transformed into their ideal partner. This would include a certain degree of mental/behavioural transformation - no identity death, but enough to encourage people to "act the part"
I like the way this works out for a number of reasons, aside from the fact that everyone would suddenly be more attractive and understanding of the opposite sex (if straight). Firstly, If you assume that a guy's ideal girlfriend would see the original guy as her own ideal partner, this means that any existing relationships would maintain approximately similar levels of compatibility, whilst providing a learning experience for both your own tastes and your partner's.
On the flipside, sexist people of either gender would find themselves living their caricatures, the worst male offenders learning what it's like to be unable to stand up for yourself, or being stuck as docile stepford-esque housewives.
It's kind of an outside-matches-the-inside scenario, and I like those.

In an ideal situation, it'd be a periodic thing. Say, changing on the first of each month and changing back on the 11th. And as people's tastes do change with time and experience, that would shift too.
