Lucasfilm said the EU was non-canon because that's all it ever was. They just came out and said it in a more official manner. They also wanted to start fresh and build a new universe. And publishers want to tie into the new material, not old outdated noncanon material

Now, I'm not necessarily saying she isn't one, nor am I going to sit here and tell you she is an amazingly well-rounded and well-written character, but I do think people tend to overlook some legitimate nuances of her character. For instance, the fact that she blindly believes Finn is with the Resistance even though it's blatantly obvious he's not to everyone but her, her foolish attachment to Jakku and belief that a family who is long gone is going to return, and the fact that the Force vision horrified her and made her run rather than embrace her cool powers and destiny immediately - all of these are flaws/ways she was wrong. I will admit there are many more eye-rolling contrivances to her character, but I don't think she is 100% perfect and I'm going to give them the benefit of the doubt and say that TLJ may flesh out her character a bit more.

With the whole Rey mind trick thing, after watching the scene a few times, it's pretty clear that she learns it by watching Kylo and having it used on her.
While I agree that it's extremely fucking fast for a person to learn a force ability, especially when they aren't trained in any force skill prior to that, it's not just her simply being able to do it naturally. She also have to give it a few swings before it works, again pretty fast, but still not flawlessly.

The ancient old republic exists conceptually, but not any of the specific EU stuff. So no, KoTOR itself is not canon, but some story elements may be. Things like the 1000-Year-Darkness and the Mandalorian Wars did happen though, such stuff is slowly being confirmed.

Some of the Old Republic stuff is still canon like the Mandalorian Wars and whatnot. Also some obscure stuff like the Order of the Terrible Glare are canon. Most of the Old Republic stuff is new though like Jedha or the ancient war with the Amaxine Warriors who ended up hiding out in the Unknown Regions and joining the First Order (and are very likely the Pretorian Guards in TLJ). As far as making movie lore darker I wouldn't really say that, but they do make it much more believable with the stuff tying into Rogue One.

I would recommend you read the Doctor Aphra comic to see some Old Republic era stuff. Then for the Rogue One tie-ins (which obviously tie in to ANH as well since it covers the creation of the Death Star) I would recommend in this order:

The Rebellion Emblem origin in Canon is actually really cool. The idea was that there are multiple Rebel Cells across the Galaxy, and when they come together in alliance, they put their emblems together into the shape of the Starbirds that Sabine draws.
