1. They're actually in a relationship but it never gets mentioned in the series itself since that only covers theirs missions and they don't want distractions on those.

2. In A New Dawn Kanan makes very clear that he's into her, while Hera is aware of that and doesn't mind it, but the rebellion has priority for her.
Now, knowing that Kanan is only in it for her, she, being the staunch idealist she is, actually puts out for him from time to time just to keep him on board and to be able to use his jedi powers for the rebel cause.

There's way more going on than that. Sabine only wins against Ezra because she was given Mando tech designed specifically to fight the Jedi. This seems to piss Kanan off and he lashes out at her because she's not adhering to his strict Jedi dogma. And later on he smashes up her new toy.
This might be the episode where we start to see Sabine turn around as a character. Frustrations and being out of her comfort zone could add a lot to her.

She isn't really all that different, only thing that seemed off to me was that she was way more like a flawless action girl than in Rebels, taking on several dudes in hand to hand combat and stuff like that.
Almost everytime the novel goes "damn, she's fine" it happens in Kanans internal monologues where he thinks about her, so I don't know if that's really inconsistent with Rebels.

Ezra is literally always saving the day. Between him and Kanan the majority of episodes revolve around them pulling off constant badass Jedi feats, taking on walkers single-handedly and all manner of crazy, unbelievable, overpowered shit that Hera or Sabine couldn't dream of.

Relax, Ezra wasn't trying when she went all out with her stuff and then immediately lost to Kanaan WHILE getting the ambush meaning that's worth like 9,000 losses in all seriousness which is why she loses it and gets so mad. She, like any real warrior, knows if you lose after ambushing someone you might as well take your own life right then and there because the skill gap between you is insane.

Mando pride hinges on their ability to fight, they can't beat Jedi so that's always going to be a thing that enrages them. She's gonna learn what she can and can't do in this and be better for it. She'll end up fighting better than ever by the time the Darksaber stuff is over.

There's not really much evidence to suggest a boots on the ground, infantry force exists in the "Imperial Army" outside of Stormtroopers.

TFA's Stormtrooper fluff also heavily implies that the training and competency of Empire-era Stormtroopers varied MASSIVELY to the point that a lot of them were practically useless.

For Canon, just about all the Marvel Star Wars comics have been either okay or awesome, so I'd recommend them.

For legends novels, the Thrawn Trilogy, which consists of Heir to the Empire, Dark Force Rising, and The Last Command, is basically the mandatory starting point. I can't really comment too much on legends comics, but John Jackson Miller's Knights of the Old Republic might be worth checking out if you're familiar with that time period through vidya.

For new canon novels, Lost Stars is probably a good place to begin, although canon novel recommendations more or less hinge upon what you're interested in. Both Bloodline and Catalyst might be worthwhile as they respectively give backstory to TFA and RO. For canon comics, I'd recommend Darth Vader, Lando, and if you've watched some Rebels, Kanan.

Not the dude you're responding to, but both Lords of the Sith and Tarkin are good and rank highly for me in my canon novel rankings, although both require fairly substantial disclaimers.

Tarkin is a fine book, but I feel like you really need to go into it with a certain mindset. If you want to learn more about what makes Tarkin tick then it's fantastic, but just don't expect riveting space adventure.

Lords of the Sith, while certainly having a lot of Vader and Sheev shenanigans, also has a lot of emphasis on the insurgency that they're opposing and also some internal Imperial misconduct. This isn't a bad thing, but you should know going in that Vader and the Emperor aren't always going to be front and center.

That's probably still canon. I mean I'm not saying it's CONFIRMED canon, just that that's probably the kind of shit he was up to. His immortality obsession is definitely intact, that wasn't just a convenient lie to tempt Anakin just a weirdly convenient truth. Kind of sucks how badly defined Palpatine's ultimate goal is. The Empire and defeating the Jedi was just part of it, yet the Tarkin novel is a bit vague. His schemes may encompass Plagueis' obsession but they're supposed to be next level. Totally trippin' balls. The implied implications are that Sheev thinks he can literally break the Force and become the Master of the Galaxy, a Dark Side God who can reshape reality to his whims.
