why is whey the most popular protein? Hydrolysed beef tastes just as good with better protein content but doesn't have that chalky texture to it.

Get a better whey protein, not all whey is the same. Also beef protein is fucking expensive. I'd rather spend the money on actual beef.

wrong. You haven't tried beef protein in shakes. Whey has a chalky texture while beef protein has a milkshake texture.

I've tried two types of whey, normal whey from myprotein and whey isolate from bulkpowders. Both have a chalky texture. Maybe you're just used to the texture, try beef instead you'll notice how much better it is instantly.
Also beef protein is half the cost of whey for me.
