The only reason they were consumed by humanity in the first place is that there wasn't enough meat to go around. It was desperation.

Offal is the mud cookie of the animal.

Soak it in water in the fridge for a day, cut into reasonable pieces, then fry it in butter.
But don't fry it to shit. There's no fat in it and you don't want to overcook it.
Have it with some likewise fried onions and I guess potatoes and gravy or maybe some rye bread.

Also it seems as the onion mash that is under all the pieces is the main dipping for bread.
After such a combo you eat the liver piece or the kidney, or whatever.

Butterfly open and remove the tough vascular parts from the middle. Soak in several changes of salted water. Either tenderise and flatten the bloody thing with a meat mallet and sear quickly in butter at high heat, or use it in a recipe that bakes or stews it for a long time. Anything betwixt these extremes will be inedibly tough. May I suggest pudding?
