Most coffee sold in the US is roasted to a Full City Roast+ at most which isn't charred at all.

The browning of the beans comes from the maillard reaction - the same thing that turns the crust of a loaf of bread brown. Are you stupid enough to think that bread is a carcinogen?

You're using too much water to start with according to the American Cupping Society...

195 is not hot enough to extract some of the components so you are going to miss some flavor elements.

50g for bloom is too much, 20s is not long enough.

These are generalities and they may all differ given different sources for beans and the roast.

Given that you didn't list an origin for the bean or the roast I'm going to just assume that you have no business working with a pour over anyway because even if you did manage to not fuck up everything - you wouldn't be able to tell if you got it right anyway.

anyone VST basket here? i just picked up my first tonight (a ridgeless 20g vst) and am pleased with the results over the stock silvia double filter. even though i went 2 steps down on my grinder my shot ran a little fast so i think there's still some room to dial it down closer. first thing i noticed from the shot tho was how noticably richer and darker the crema was.

Water should be much hotter, at least 205 to start, ideally closer to 208 (to account for the temperature drop mixing with the grounds will cause).

I know that blooms are normally done with 2x coffee weight, but in my Chemex I've found that 3x coffee weight consistently produces better results.

This is because pour over is a meme. People should just use drip machines. They are superior for home cooks because everything is already preset to hit certain temperatures and measures. the trick to getting the most out of coffee is roasting your own beans and grinding to the right setting for your extraction method. if you grind medium to medium coarse, drip machines make a better cup of coffee anyway.

Breville has really made a name for themselves in the almost commercial grade "pro-sumer" market for kitchen gadgets. Their unit the Breville BDC650BSS Grind Control looks to be full featured... but I would probably save some money and get the Capresso 464.05 CoffeeTeam GS 10-Cup Digital Coffeemaker with Conical Burr Grinder.

Capresso grinders are top notch.

In order to avoid the possibility of getting cancer I would only use medium roasted coffee in my espresso machine.

To make my experiment with switching brands I would buy very good quality coffee,talk to the seller or I'm sure there will be experts here

in medium roast suitable for espresso machines, making espresso is done and doesn't have to be the traditional dark roast beans.

Some flowers do, I smoked dried up rose peddles and few other flowers, they give some high, (not the type pot is)
but very interesting mild some sweet pleasant but short buzz.

Am I ruining my coffee with cream and sweetener? Is it worth trying different kinds of coffee?

I currently drink the coffee pictured. I take about two tablespoons and put that in my moka pot. When it's done I add about 3-4 tablespoons of some sugar free creamer and about 1-1/2 packets of sweetener. Is this similar to eating a well done steak, i.e. it doesnt matter what cut of meat you get because a well done steak ruins the flavor that particular cut might have? I've tried other kinds of coffee, and I realize that dark roasts aren't my thing, but I'm open to just about anything. Any recommendations?

You can make coffee simply by dumping ground coffee into boiling water and sifting it out after 3 minutes. A french press just streamlines the process. You don't need a fancy machine.

Ew never a big fan of the process, covers up alot of the fruity flavors of the coffee. Ends up tasting like darker richer flavors, which is goof for certain coffees but not like an Ethiopian or Colombia or Panama?

Just finished brewing. Still tinkering my grinder since its new. My usual ratio is 16:1, so i use 20g coffee to 320g water.

I usually aim for around a brew time of 2:30, but i just brewed right now at a time of 2:05. So its either grind size or technique

Lido 3. My fucking nigger. I just got my Lido E-T, so the fine threading option is giving me a bit of trouble dialing in the grind size I want.

The coffee I got should taste like lime, plums, maple, and raspberry. But i'm only getting the citrus and tart notes. So ill have to take in account brew time and grind size. Water is another issue, since i use a concentration that I dilute with RO water. Im about to reee

Yep. Bunnzilla is a Bunn with Ditting 804 burrs.
