The rich always were able to eat out at nice places. Some of the oldest restaurants in the country are very expensive NYC steak/chop houses. But you're correct that the idea that the middle class could eat out (beyond workingmen grabbing breakfast or lunch at a diner/pub/sandwich shop or families grabbing a snack in lieu of a meal) is relatively new. And a lot of middle class people were suspicious about eating out - thinking it wasn't going to be "clean". (The publication of the Jungle didn't help much). That's how places like McDonald's managed to win them over, by being clean, modern and efficient. As places opened up that made dining out withing reach of even the poor the upper middle class wanted something more like what the rich always had access to.

That's where the fine dining thing in the 70's came from. Your not quite rich aunt and uncle had enough money to eat out at places similar to where the rich ate. These places ranged from style over substance (all decor and service, but mediocre food) to very good. Being able to tell the difference made you either a discriminating diner or a pretentious overly critical prick, depending on who is judging you.

I've been to Italy several times. (Best salami I've had was in Milan, which was no surprise since the name of that town is strongly linked with the product). I'm just talking about American English usage of borrowed words, particularly Italian plurals related to food. What is clearly plural in Italian is singular in English. We used to have this cheapo hotdog/burger chain here called peters that was famous for having 52 different sauces and they legit had 52 sauces they made themselves and they were actually good and sometimes really fucking good
