Why do crypto currencies generally get harder over time to mine, rather than the first block taking the longest and halving from there?

One of the reasons I never got into bitcoin was the barrier to entry for mining - it is pretty much impossible for me to mine a whole block of coins, short of buying a warehouse full of ASIC miners or joining a pool.

If the barriers to entry dropped over time instead of raised, more people would start using it.
