Current canon is that its Excalibur that stops her aging.

FGO Camelot plot is about an alt world scenerio where Bedivere failed to throw Excaclibur into the lake the third time Arthur sent him to do it. So he wandered the world 1400 years searching for Arthur to atone for his mistake.
