I'm suddenly really impressed by Cure Mofurun's design. It's incredibly distinctive and memorable even though it was only used the once, and they even managed to work the style changes in. Why didn't Haa-chan have style changes again?

For caramel, you really must use granulated sugar, no substitutes. No brown, raw, icing, powdered, anything but regular old granulated.

For the pudding itself, it's a tiny bit easier to use powdered sugar because it'll dissolve in the milk easier, but granulated sugar is just fine, especially since you're heating it and that'll help the sugar dissolve a lot.

Part 1 of 2

* Before you make the caramel, spread a thin layer of butter on the pudding cups. This will help them to come out cleanly.
1. Put the granulated sugar and water into a pot, stir just a bit, then place on medium heat. From now on, swirl it to mix and keep on heat until the sugar is melted.
"While the sugar is melting and until it changes color, do NOT use a spatula (or similar) to mix, or else the sugar may get crunchy!"
2. After the sugar melts, wait until it changes color, then lower the heat, shaking the pot to swirl it to ensure even distribution of heat.
3. When the sugar becomes darker and starts to give off a strong smell (and may even smoke a tiny bit), turn off the heat and add the (hot) water. * Steam will come off so be careful not to burn yourself. Safest is to have the hot water in a container with a handle.
4. Stir momentarily, then pour into your pudding cups. Once it cools, you can store the cups in the fridge while you work on the rest of the pudding.
"If the caramel is still warm when you pour the pudding batter in, it may get mixed together."
5. Beat the eggs in a bowl.
"Getting lots of air in will help the mixture to get smooth, so beat the eggs to really mix in the egg whites!"
6. In a small saucepan, add the milk and powdered sugar and mix lightly, and warm the mixture (over low-med heat) until bubbles start to form at the edges.
7. Gradually add #6 to #5, mixing constantly. Add vanilla.
8. Run the mixture through a sieve. Place the pudding cups in a pan and pour in the pudding mixture.
"Straining it will give the purin a smooth texture. Once filled, the cups will spill easily, so put them in the pan before adding the mix!"

9. Move the pan from the countertop to the oven rack, and fill the pan about 3cm up with hot water. Bake at 160°C/325°F for 45-50min.
"Once the pan is full of hot water it will be dangerous to move, so only add the water once the pan is properly on the oven rack."
10. Take the puddings out of the oven to cool. Once cooled, cover with plastic wrap and place in the fridge for up to 5 hours, until well chilled.
11. Extract the puddings from their cups. Work your way around the edge of the purin, pressing gently to loosen it from the cup. Imagine trying to get air between the cup and purin.
"If it doesn't separate easily, try using a bamboo skewer or knife along the edge, that should help a lot!"
12. Place an upside-down plate on the pudding cup, hold them together firmly and flip them upside down, then gently lift off the cup.
13. In a bowl, put the cream and sugar, place this bowl in a bowl of ice water so that the bottom is being cooled, and beat the cream until stiff peaks form.
14. Prepare a pastry bag with a star tip, and pack the whipped cream from #13 inside. Squeeze out cream on top and on the side of the purin.
15. Place your chocolate pen in hot water, cut off the tip and draw a nose, eyes and tail.
"If you can't seem to draw well on the surface of the purin, you can use a paper towl to absorb the moisture off of its surface first, and it'll draw much better after that!"
16. Finish with almonds cut to look like ears.

- If you're wondering what was going wrong in the show, she was stirring the caramel while it was still reducing. Because the dissolved sugar solution is supersaturated, that leads to crystal formation. There will already be a bit along the edges of the liquid, but swirling the pan instead of mixing will avoid the biggest part of the problem.
- When adding the hot milk to the beaten eggs, pour milk in a little at a time and mix well before adding more. If the eggs get too hot too quickly, they could curdle (forming little globs, like scrambled eggs). This process is called "tempering", and we'll probably be doing it again this year. Straining it afterwards should get rid of any curdled bits you might have gotten accidentally, that's the major point.
- They're not kidding about the moving the pan to the oven before adding water. This will make your life a million times easier. This set-up is called a bain-marie, by the way. Even though the oven is 160C, this will keep the heat much more gradual and controlled. It can technically also called a double-boiler, but that's a term usually reserved for stove-top setups with one pan nested inside another.
