But JoJo does have great world building though, part 8's had some of the finest world building in the series with how much they elaborate on the setting and the people there getting involved in the phenomena like Shakedown Road and Milagro Man. Hell even part 4 had really memorable world building.

Yasuho is kind of over rated. I keep seeing people here call here the best girl and she isn't? She's just kind of there and really dedicated to Josuke for no real reason. Araki is shit at romance but there's no natural development to their friendship, they met and they instantly fell for eachother. In every other part Jojo and his friends had to work at their friendships it wasn't this instantaneous thing, for instance Okuyasu tried to kill Josuke, Hermes thought Jolyne was annoying etc, then these characters went on to form close friendships with eachother that we got to see grow through trials and tribulations, but we don't get that with JJL, it's kind of dissapointing to be honest.

Which makes me wonder how much on a stand is nature or nature?

We see stands users whose stand reflect their current, adult self:
Pearl Jam is a cooking stand for a chef.
Heaven's Door is a manga stand for a mangaka.
Cinderella is a beauty stand for aesthetician.

But Josuke and Giorno are mentioned or shown to have used their current stand ability as children well before their personalities, hobbies, and dreams were set in stone. Donatello and Rykiel unconsciously used their adult abilities too and Donatello just seemed to be a normal kid before his life turned to shit.

Is this related to fate? Are the abilities set in stone from birth but the form they take can change with their development(notice we never see a punch ghost in these early stand uses)?

I don't see anything unnatural about their relationship, but I think in the first few chapters Yasuho was puzzled and then endeared to how innocent Josuke was with his interactions with her. It's kinda sad now that Josuke is now either stoic or ruthless when she isn't around, we don't see much of the goofiness that warmed her to him anymore.
