Thing is that it can't be that hard to make a couple work. Hell, Ichigo and Orihime didn't even 'work' outside of her having a thing for him and him being protective of her like he is of all his friends. So it probably wouldn't be that hard beyond, say, giving Tatsuki a power, writing her into the plot more and giving her a thing for Ichigo. It just isn't something that's done because she isn't the type to be a love interest or something.

It's more a point that Orihime is the character archetype that he decided to set up for that, which is the most common type.

I always liked Rukia better but I knew since forever that he'd end up with Orihime, if only because that would be the more typical pairing. Hell, I don't think there ever even was a love triangle there. Also it's shonen, so romance tends to just be on the backburning. I also rarely get invested in relationships even then since I always expect the worst or the most predictable. Either the worse girl 'wins' or neither girl was interesting to begin with.

It had more basis because Orihime had far more focus in the series. But despite that the relationship between Ichigo and Orihime wasn't really that developed at all. It was so underdeveloped that it would've been perfectly believable that within 10 years Ichigo might grow closer to Tatsuki.

I feel unsatisfied because their relationship wasn't developed enough. Given that the romance was underdeveloped I would've preferred that some underdog ships like IchiTatsu and IshiHime won out in the end. See, while I am not a big Orihime fan a big part of why is because their relationship isn't developed. Even when the relationships are given more attention they aren't really well developed. I think it's as you say, the safe choice. Writers love safety when it comes to such things, and just take whatever shortcut they can when using it.
