The author basically self-published his story online for free. There's tonnes of websites that allow you to do this, amateur writers can upload and update their own original stories for people to read; like youtube for bookworms.

RE Zero got so popular that an actual LN publisher took notice and got the author on board to redo the series as proper light novels, published in hard-copy and sold for profit.

The LNs have minor changes, mostly just cleaning up prose through the efforts of a proper editor, but follow the same essential story. They still haven't caught quite up to where the WN is at. The anime is, officially speaking, an adaptation of the LNs and not the WN. The LNs aren't actually much further along than the anime is currently, so most of the spoilers and other information beyond it comes straight from WN summary translations. Technically speaking, there's no guarantee that they won;t diverge at some point, even though there haven't been much in the way of plot alterations thus far.

It's the business model. No LN gets adapted without boosting sales hugely, especially a plot-driven fantasy series. No matter how poorly something does, you can be sure it will turn a profit if it's adapted. They probably say the potential in the series for an anime an banked on that. More than anything else, the "I want to see what happens next!" urge will drive sales and surge popularity for a long time after the anime finishes airing. I'd owe the lack of popularity to the author's awful writing style and bland prose, even as far as LN standards go. But, even as mediocre as it is, people will pay to read it just to see the continuation of the story they watched on tv.
