I don't think her power is really aging someone. One of the underlying drawbacks of powers in One Piece is that lifespan is taken away from a person; Luffy is especially hit hard by this. I think Big Mom's power does the same thing, but to other people. So someone that should have died at say, 65, and gets 40 years taken off their lifespan, and are over the age of 25 should die instantly.
Brook just gets around this because he can't die in the traditional way anymore, but he can still die by having his fruit power drained from him.
