If you want to learn to handwrite / do production type cards, then RTK is a good way to go. It's particularly helpful for visual / kinesthetic learners.

You spend more time upfront becoming familiar with the kanji in order to save time later when learning vocab: they are easier to learn and tend to be easier to recall due to the familiarity. Production type cards tend to really cement your understanding of a word in your mind earlier than just recognition, but both production & recognition equal out in the very long term.

If you just want to read things to consume recognition works just fine, and might even be faster if you don't mind it being more difficult up front + possibly lower retention rate at first.

I think the number people should be reaching for is closer to 10,000 anyway. You won't be reading Muramasa at 10k but you will be able to conformably consume the vast majority of content out there. And I don't regret it because I read in that time and that was more important than anki. If you mean as a first VN, then your options are pretty much Axanael or Flyable Heart. Flyable Heart is good because it has a throwaway common route and good routes and a multi route story that all ties together. Almost anything you read you're going to butcher, so Flyable Heart's throwaway common route or Axanaels all around low difficulty once you get into it are pretty much your best options.

My goal, which I think I accomplished fairly well, was to provide some works of certain difficulty levels. I didn't want to recommend novels as novels themselves, because there are plenty of sources for that. I myself don't think HatsuMira is *that* good, but it was certainly a step up in challenge.

I read all those games, so I can explain in simple detail why their difficulty is "real" - the vocabulary is a stratum higher. You could read 50 moege and still be blown out by Bradyon Veda, because Bradyon Veda is hard science fiction that covers topics Moege pretty much never do. I don't mean to say Silverio Vendetta is harder because of any phantom reason, it is harder straight up because its vocabulary level is very high. That's it. HatsuMira's vocabulary level is challenging, but not as much. Sci-Fi nukige are challenging, but not as much.

I for one think the chart is helpful for people not really into the VN scene, but still reading VNs to practice. Bradyon and Silverio are both games easy to overlook compared to the universally known Dies Irae and Muramasa. One may not think to read through some sci-fi nukige to pound out that vocab in a simple setting. Hatsumira is not something anyone talks about, and may not be something one would expect to be hard. Etc.

Basically, what I'm trying to say is, anyone who has read primarily moege will struggle with the middle row, and struggle a lot more with the third row. So even though "everyone's different", everyone can use that chart as a reference of some difficult games, should they desire it.

If that's not the problem then it just means anki has scheduled away the common ones, which you learned easier. That's anki's job. The remaining 90% are to make your brain recognize arbitrary kanji stroke shapes easier.

Well, in any case, reviews absolutely have to be uncapped. If you get too many reviews, you should lower new cards, not reviews. Having a review limit just makes it impossible for anki to schedule things correctly.

What's the highest new cards/day amount which is actually sustainable?

Stuff like the Core6K and Core10K decks would take a considerable amount of time at the default 20 new cards/day setting (10 months for 6K, 16 months for 10K). 30 new cards/day can shave quite a bit of time off, but it's still a lengthy process even then (~6.5 months for 6K, ~10.5 months for 10K).

Depends on the person and how much time they have / how many reviews they're willing to handle. That's a really vague question. For me at the start I couldn't really handle any more than 20-30 without my retention starting to suffer. After I did RTK my only limitation is basically how many reviews I'm willing to do long term (i.e. doing 200 new words has 0 negative effect on my retention even if most of them have kanji I haven't seen in vocab yet).
