"Everyday Life in Central Asia" if you want to know about what was life like for the various groups during the Tsarist Period, the Soviet Period and in the current Post-Soviet. It's interesting, but it focuses more on societal aspects and it more a collection of interesting academic papers than an actual book.
"The Great Game" by Peter Hopkirk is good too, but it's more for understanding the greater historical context with which the manga takes place in as it looks as the struggle between the British, the Russians, and the natives for control over the region.
"Empires of the Silk Road" was pretty meh. I had to pick this one up for a class and I was kind of disappointed in it, but it's cheap so that's a plus.
"When Asia was the World" has several good chapters centered on Central Asia during the Medieval period, but it's not Central Asian specific so it can be skipped.
I'm not really familiar with any documentaries, but there are probably some old NatGeo documentaries on the Silk Road on Youtube.

"Apples are from Kazakhstan" was the first thing I read. It's pretty neat. The only downside is it's partially a hagiography to Nursultan Nazarbayev. It makes sense because the author had very close access to him and it was probably too much to resist. But it goes into the history and culture of Kazakhstan. Very neat book.

They didn't disappear after the 19th century ended. The rule of the Tsars was fairly lite in Central Asia. They turned the region into a monoculture with their demand for cotton, but the integrated a lot of the local elite into their administrative system and didn't try and make them Russian. Two of the Emir's even kept their thrones and became protectorates. It wasn't until the the Tsar tried to force conscription on them that they took issue with the government. The USSR tried its best to destroy everything about the nomads and settled peoples of Central Asia and Mongolia.
Constantinople is nice, really touristy, but nice. Given the current state of things between Armenia and Azerbaijan and the real lack of any clear resolution in the near future I'd advise going there. Iran is really cool, only been to Tabriz, but its got a lot of history and I hear that it has a lot less smog than the capital. Never been to any of the Stans, but Kazakhstan is probably the only reliably safe one. Xinjiang is great for the history, but depressing because the natives are poor and deeply resentful of the fact that they are quickly becoming a minority in their own country.

Kazahks and Central Asian Muslims are very different from the ones in the Levant When Islam came to Central Asia is took a lot longer to convert the native peoples and it did so through Sufism, meaning it was more the spiritual angle of Islam that became infused with the nomadic Central Asian people instead of the legal/judicial aspect that's causing the problems in MENA. Sufism also isn't nearly as hostile to local customs and traditions. In fact Sufis often incorporate many local traditions into an Islamic framework.

If anyone is turned off by muslim is should be anything but the women. A muslim women if religious enough ( albeit not zealous)is generally quite low maintanance and loyal. its just another typical athiest question, as an athiest myself I can pick it out. its a logical problem that your paradise proposes, if you are an asshole, but hold back on being an asshole to get into paradise, in order to truly be paradise, your paradise would necissarily contain things that are immoral would they not? even if you suggest that assholes wouldnt get there in the first place, you've already admitted lesbians and gays into heaven if they don't "Act" that way. then they get to paradise, and suddenly all their desires are fulfilled, which means plenty of gay sex to be had yes?
Religions aren't meant to stand up to this kind of logical scruitiny, they where made in a time when this kind of thinking got you beheaded. their adhereants are antiquated, but not evil, nor is their religion, as strange and illogical as it seems really an issue. Looking at athiest countries, you can see a rife spread of superstition and base pagan philosophy and sentiment.
The kind of strangeness that comes from these rules and their self contradiction being oppressive isn't really an issue of the religion or it's adherants being at fault. the fault is with the human condition. It's that epiphany that escapes many athiests, and makes them hold themselve superior, because of the way these kinds of problems make no sense to us.
They don't really pose a problem for the believers, because religion is diverse, and when presented with these logical problems, there are many ways in which they can be excused and ignored, that aren't good enough for the athiest, but are just fine for a believer.
