Mc is your average human in a high fantasy world who is inspired to be a heroic knight he hears about who are all Gary Stu strong and out going.

During the course of the story the Mc gets in over their head fighting a Slime, and is saved by a silent knight in full armor who is trying to get over the suffering their long life has caused them.

Mc spends the rest of the story following the silent knight around to become like them, becoming their Squire. Nice world building, father-sonu like bonding, and other stuff occurs.

A Last Exile-esque anime about a young boy and a girl who live alone together who one day find a treasure map their dads had left behind when they left to go treasure hunting and never came back.

They set out on an adventure in a steampunk world traveling to mystical lands in airships seeking the lost treasure but at the end of the anime they discover that the greatest treasure of all was the power of friendship.

The MC is the first princess of a prosperous kingdom until the 2nd prince leads a revolution, deposing and executing all other members of the royal family.

The MC flees with the help of a few loyal servants and knights, but is hunted by her brother's men.

As the men closes in, the princess gets desperate and enters a supposedly haunted forest, where she happens upon an ancient tomb.
With no choice but to hide there, she enters it, accidentally awaking a demon that was sealed 1000 years ago.

Due to a condition of its awakening, the demon must pact with the princess, and ends up bound to her.

Now, with the world's most ancient evil at her side, she sets out to restore her kingdom.

Rrr! Wrong. Second part of CG was the best.

As for an anime where the first part was best, try Gundam Seed.
