No real reason to change the art style at this point. Those textboxes are unnecessary though, in my opinion, and are a bit jarring.
The style worked for Undertale, but not so much for pastel cartoon horses.
As for the combat, I haven't played in a bit, so I don't actually know how it is.
What I can say, is that in Undertale, the only real motivation for killing the monsters was either boredom, or to purposefully get the genocide ending.
Give players a reason to want to be bad, or at the very least, not to be an absolute goody two shoes.

The players right now majorly want to be good, though. They've not voted to attack or kill anything except when they attacked 38 to save Soft Serve. Undertalefags don't talk much on 4chan because they know they'll get berated for liking a popular thing, but there's enough around that a CYOA ripping it off overtly would succeed as long as there aren't other detriments like really shitty writing.

There are a couple of autists in the royal guard threads with a hateboner for male homosexuals who insist every such story is just people trolling as is anybody who thinks they are being faggots. I have an idea to make a sorta CYOA about anon working in the fast food Hayburger place. I planned on just drawing something and posting it, but I decided to post here just in case.

Having a few years in fast food gave me a good bit of experience with the different people that ive worked with, and I thought itd be fun to put it in a pony setting to see how it goes. And it'd be a good thing to occupy my time with.

If the premise is Anon working in fast food, why even bother putting it on /mlp/? The ponies are secondary to this premise and could be easily cute and pasted for people.
Wow, you're in equestria as an out of place human who doesn't fit the setting working a dead end fast food job.
See what I'm getting at here? If this story were to be told on earth, what would change? There wouldn't be ponies. The way the characters would act would be the same, the restaurant the story takes place in would be the same. There's no discernible purpose to making this story include ponies other than the author likes them.

There's no why to this story, no theme, no reason for telling it. It's just an exercise in monotony.

But im unsure how it'd work as a CYOA, having readers choose what to do from what you can do in it. I thought about anon reacting in different ways to the array of different pony/griffen etc. customers that can come up, and how he would handle them, because Ive met a many sort of people and a lot weirder stuff happenes in the pony universe. Along with the different jobs within the store anon would have to do as well as the different type of coworkers he would work with

I see your point, but ficional settings can be more interesting than actual life. The setting of the story would be the hayburger joint Twi eats at on the Twilight Time episode. So in Ponyville thered be a decent pool of ponies to serve and the coworkers i would try to make into actual interesting personalities in a way. I would try to make the 'supernatural, oh its a bugbear attack thats taking place outside' seem like a normal thing that anon has to watch out the drive through window as he takes orders from ponies riding in carriage and other positions in the store

The whole thing turns some scenes into empty back and forths that really hurt the quality of the quest though ruined pacing.
