You're taking the quote out of context. Before various missions to the moon, we didn't really have a good idea what it's internal structure was.
After we'd place seismic sensors various places on the surface, we smashed an object into the moon to get readings.
When they say "It rung like a bell", they don't mean "literally like a bell and thus hollow", they meant that the seismic waves lasted much longer.
This pointed to a vastly different internal structure compared to the Earth, more precisely it is much more solid.

Think of the Earth's structure being more "sponge like", it absorbs and dampens these seismic waves. While the moon is more like a rock-like.
