According to Christianity, how are demons created? Are Demons the un-rested souls of people who lived their life in sin, or you are either created from the start as a demon, just like angels? (From what I've read, you can't become angel, even if you go to heaven)

You've read wrong, the Bible even says you become a brother or sister of Immanuel, because he's an angel, you in turn become sons of god like him. In this Universe, this is just one emanation of the true God.
The idea Paul (Galatians 4) seems to have in the NT is that there are "elemental forces," basic powers that control the world and it's events. This can be interpreted to be demons, at least in part.
In Enoch, the sons of the fallen angels are condemned to become demons. They are to thirst and hunger and never find relief.
