Some people believe you can. In traditional Jewish Mysticism it is said that the creation of a golem is entirely possible. There are a few legends of different Talmudic scholars and rabbis creating them at different points in history.
The most famous is Rabbi Loew, who lived in Prague in the late 16th century. It is said that he created the golem out of clay from the banks of the Vltava and named him Josef but was called Yossele. It was the job of Yossele to protect the Jews of the ghetto from the pogroms that Rudolf II was planning.
It is unclear what exactly happened as it varies depending on the legend. Some of them say Yossele fell in love but was rejected, others that he eventually went on a rampage and began to kill the Jews he was made to protect. But all of them agree that Rabbi Loew forgot the deactivate him on Friday evening so that Yossele could rest on the Sabbath, which was the only rule. They all also agree that Rabbi Loew eventually managed to deactivate the golem in front of the synagogue and placed his remains in the attic in case he ever was needed again though when various groups and individuals investigated the attic hundreds of years later there was no evidence of any kind that would indicate the golem ever existed.
There was a video about a Russian guy who supposedly made a homunculus by injecting his semen to a chicken egg. It was debunked to be fake but it still creeps me out.

There's an actual creature that you can make, just by factually knowing it exists. The phenomenon is unexplainable, but provable.
There is a creature that lives outside of our perception of sight and sound. It is invisible to most light and sensors and isn't in high enough number to be stumbled upon. They live in woods areas and are excellent killers and very silent and cautious.
However when you know about them, they have a unique defense mechanism. They have a minor psychological effect to humans they target, and they almost seem omnipotent about when they're discovered. They can manipulate your mind so you can't see them, you may catch a glimpse but they will immediately "disappear". Usually they will escape but some hostile ones will stick around and "haunt" you. It will give you a perpetual feeling of something watching you from the corner of your eye. It may even fool your mind into seeing it, but it never shows its true form. It picks something it knows your brain would be horrified by.
This creature is real, mostly harmless, and you can "make it" just by being unlucky and knowing it exists
