Right in the opening video he gets it wrong, Polaris has only been a proper Pole Star for the past ~1000-1200 years or so.
Which actually brings up an interesting point, the Age of Discovery took off during the 1500's, only a couple hundred or so years after Polaris was a close enough approximation to be used to determine latitude to a reasonably accurate degree.

But even today, Polaris isn't a perfect pole star. You can notice this yourself using a telescope, Polaris does make a tiny circle around the true Celestial North Pole.

Because you can point your scope at the moon and use that it easily test whether you're focused or not.
Proving the earth is a sphere is easy to do, and anyone with basic knowledge of geometry can figure it out independently.
All you need is to go outside and observe the motions of the sun, moon, and night sky. Do that for six months and try to fit your observations into a flat earth. It can't be done.
Bonus points if you take a vacation to Australia/Brazil/South Africa and observe the night sky down there.
