Binding spells are about control - making something (typically a person or spirit) perform (or not perform) a particular action.
In a computer analogy, think of the target of your binding spell as a computer; and the actual spell is the program - telling it to do, or not do something.
Unbinding is undoing the spell, releasing the target from the control.
