As for health benefits, I don't see any reason to believe there are any benefits that you wouldn't get from eating any other meat. Eating brain matter would be a terrible idea though, there's a high risk of getting prions.

And people have already taste tested human flesh. A man willingly had a piece of his flesh surgically and safely removed and cooked, and other people who have engaged in cannibalism have said the same as he did.
