My question is though, what happens after you colonize new star systems? With infinite time what would you do? Perhaps the form of immortality we already have is the perfect version of immortality? (infinite biological lifeforms throughout the universe with death intermissions to visit home/source before moving on to the next "mortal" adventure)

Immortality does not equal invincibility.

Some will be destroyed, some will be killed, some will die horrible deaths.

But with infinite time, and the potential to genetically engineer oneself, we gain more goals than just the perfection and propagation of the species.

We could seed planets with life, we could build portals, we could alter the very fabric of reality to become super neato mary sue space wizards.

I don't know, this is all just theorizing. Potentially anything goes once human beings gain immortality.
