Does seriously practiced--not ironic or satirical--Satanism really have any history? If so, what rituals and symbolism did they use?

The Wikipedia article for Theistic Satanism doesn't cite anything older than a few edgy Ohioans in 1948.

Satanists love to portray their religion as being muh ancient and deep, but I can't find any real history of people practicing it as anything other than an edgy attention grab in a largely Christian society in modern times.

First you have to have the right frame of mind. The occult's all about the idea that human emotions, dreams, and shit like that have an influence. There's a whole other realm made of the stuff and the occult is used to bridge the gap.
You start out reading shit like Sartre and Neitzsche. You don't have to believe in the shit, you just have to understand. Nihilism, then cynicism, then debauchery, etc.
Human beings are fucking worthless but our blood and emotions have power in the occult. That's why human cults have done sacrifices and shit since the dawn of time.
Cause the final realization is that death isn't the end. There is/are entities on the other side. And that shouldn't comfort you, it should fucking terrify you.
