What are Buddhists talking about when they say the ultimate truth is emptiness? What is emptiness? Is everything one? Is rebirth what happens after death?

If it could be so easily described there would be no point living what makes you think we're supposed/allowed to know such things jesus we're no gods. We're so far from being anything even remotely important enough to be granted this knowledge. No one no matter how good or smart they may be will ever be granted "the ultimate truth" while still breathing.
This is a beyond arrogant question and therefore will never be answered. Like most human questions. Remember your place and do not overestimate it. Sapience is nothing but a growing 'questions without definite answers never ending book'. Be glad you can even ask yourself such things and be grateful they will not be answered. No one is born to be the bearer of such answers. Go bless you.

The universal truth is already known to us. Our personal civilization's truth is slowly being revealed now.

There are two perspectives.
You can look down and see that the things below you are the only solid materials in existence. Those forms eventually fall apart and decay and are returned to the earth, because that's all they ever were. Even objects above which seem different than earth (clouds, rain) are in actuality just various states of the same dirt. It's all just atoms.
You can also look above and see that the shapes and half-forms above, while just atoms, put the solid material forms below in perspective, and that the things above, since they may be observed without having a strictly defined form, are more readily seen with a meaning beyond their actual shape or even function. A cloud then, not seeming solid (even though it is only atoms, like the rest) can more easily connect logically with the earth, showing you what *is* and what *is not* to demonstrate what passes beyond and exists beyond existence and being.
Plug in various things for x and y, for dirt and clouds, and you can see how most things demonstrate the thing which can't be seen.
You could also ask whether the whole of a thing is more than the sum of its parts.
Form is emptiness and emptiness is form.
Think about what Bruce Lee had said - something along the lines of "Be like water; formless"
Essentially ego death and learning to live in the moment (psychedelic drugs are a great help for both of these)
