Humans anthropomorphize the world around us. We understand our animals as little people. Our horrors are entirely unhuman and therefore do not fit (monsters) or appear human, but defy human expectations (murderers, sociopaths).
It's no surprise that we see the hand of God (a big human) or giants in things too large to be human artifacts. It also isn't a surprise that we take our experience of seeing "giants" as children and projecting that into adulthood.
That said, we weren't the only hominids around. We know about other archaic humans like the Neanderthal and Homo floresiensis. It's certainly possible that we've retained memories of much larger human relatives through stories.

Here's my theory for the giants:
the redhaired giants with pale skin are simply germanic peoples who settled in the land and went away or died out.


We know from tacticuses germania that the Germanics were redhaired and tall, and they were taller than everyone at the time (they were around 6 feet, some people in those times were 4 feet).


In north america the Germanic Giants could have come from the soultreans, in israel from raiders from the sea, etc. they either died out, went away or interbred with the tribal peoples.
over time these giants were made out to be much taller than they were.

Quite possible indeed. The problem with the credibility of all of this "giants" material is it is all too easily lumped in with the dubious hollow Earth theory which instantly shuts down many who would otherwise give it a chance. If any of this is true, I've no doubt there may be massive underground cities and tunnel networks, but leading many to mistakenly think the Earth is hollow when in fact it is not. What is also interesting is the claim that the technology used by these giants for these underground accomplishments was not their own, but left behind from that of an even older mystery builder race. But then again we must be careful to take all this with a grain of salt as basing supposition upon supposition is just that.

It's all anecdotal with any and all evidence conveniently going missing after being turned into the authorities.

It's not the evidence (or lack there of) that makes this mystery compelling, but rather the overwhelmingly numerous and uncannily similar accounts that span the globe and continue to persist throughout the decades of finding these 8-11 foot tall skeletons.
