Last I heard they figured out that he was one of two really crazy Polish Jews, Aaron Kosminski and David Kohen. They were strongly suspected of the murders, though never positively charged. They did, however, end up getting put in an insane asylum (the same one IIRC) for the rest of their lives for being so goddamn crazy, and after they were institutionalized the murders stopped.

Οk, the reason they were hacking apart so many different women was because they wanted to create their own frankenstein's monster... yes really they believed that the book was on to something and they wanted to verify the idea...
Naturally, nothing came out of it other than a bunch of dead women.

Lewis Carroll has always been my favorite theory.

The murders were too animalistic to be calculated. More likely it was a manic, psychotic type working out his rage.

Most of the others had completely different MOs, psychological characteristics inconsistent with the killings, or were included based on pure speculation/convenience.

When I was in London, I went on a tour of the sites where the murders were comitted and the tour guide told us all about the murders, the suspects, and theories. The main theory is that the Ripper was a surgeon of some sort (the suspect had a name but the forgot) but TL:DR the victims were all mistresses of the King and he was paid to kill them. I don't remember the details. Very entertaining tour though.
