Hexagonal patterns: No idea.
Fluid dynamics: Not really my place of interest. I'm more interested in abstract algebra, and specifically its applications to probability theory. There are some really neat analogous structures from group and monoid theory that show up in places you wouldn't expect.
But I do know that fluid dynamics is often done using decomposition of forces using tensors. Here https://en.wikipedia.org/wiki/Cauchy_stress_tensor is my favorite tool for such de-compositions.
