That used to be true, but not necessarily so anymore. A lot of recent anime is released in 1080p. If you're getting an older anime, you might as well go with 720.

Yes and no.
Bluray releases are 1080p but go for 720p when it's airing. There is little difference in quality and the file size is a lot bigger.
