What windows should I get?
I heard 10 has some functions that send your data
Are they easy to disable? If they aren't I might as well get 7or 8
Also are they all as easy to pirate as the previous versions or did they finally figure out how to stop pirates?

Go with 7. It's stable, relatively easy to maintain, lotsa tweaks and workarounds for things. Like other anons said it already, avoid 10 and especially 8.
