You actually have to hit a button to request a desktop version of the site.

That's testing a desktop site for graceful degradation, which has essentially nothing to do with developing a modern mobile site. You're having a failure of imagination; go look at eBay or Facebook in mobile mode and come back when you're done.
When what you're building is something like that, there no way you'd get anything done if you had to load it on a real actual phone and were limited to poking it to see what it did. To do real development you need a real debugger, which is the whole fucking point of Chrome's devtools having a mobile mode.

You can look up how to change the user agent of whatever browser you like, and if it's possible there will likely be a tutorial about how to do it. Once you know hot all you have to do is change the user agent to whatever mobile browser you want.
