Trying to decide which series to start up. They both interest me but I don't wanna search too much into them for fear of spoilers.
What is the appeal of either and is one objectively better?

Both of them have decent starts but go to shit pretty quickly. Watch something like Yu Yu Hakusho or JoJo's Bizarre Adventure instead.

Naruto has some awesome settings and characters but I'm not a fan of how many flashbacks they do. Bleach is all around a pretty good watch but I don't think the action is quite as good as what Naruto throws down especially once you get into it.

Naruto is definitely a great shonen. Great story and universe. The problem with it is the still lingering narutard culture that will brand even the ones who only tell they are reading the story. But otherwise absolutely excellent read.
Bleach characters are well designed art-wise. It's easy to get drawn in by their good looks, and that is the sole reason why some people read it. IMHO story however loses to Naruto in both imagination and execution.
Try both and see which one is more in your alley. They are essentially for audiences looking for a bit different things anyway.
watch Naruto first, then Bleach and don't forget to skip over almost every single filler episode, especially when there's more than 2-3 in a row. also if you haven't already, you should definitely read One Piece manga (not anime), it's largely considered to be the best one out of the three.

They are both terrible. Either way I'd say Naruto is better than bleach. The characters are more interesting, the fights as far as I remembered were better made and it does have a really nice soundtrack.
If that's the kind of anime you like I'd recommend you to watch Fullmetal Alchemist and Soul Eater instead.
