What's a good VN series to move onto after I finish reading this?

Muv Luv you might like, the order is a bit confusing so see to the related image.
Rewrite is definitely the most action oriented of the KEY VNs if the action is what you are enjoying about Fate Stay Night.
If you'd like something a little different as a break from the action then as I said, Little Busters is probably my favorite VN.
Katawa Shoujo is also a great starter VNs for people new to the medium.
And lastly, a VN it took me way to long to read, one that I think utilizes the medium better than any other I have played. Ever17 (make sure to avoid spoilers, very important in this one specifically)

Steins;Gate is a pretty good choice if you like science-related stuff, although you could also try Euphoria. Don't let all the lewd stuff fool you though.

Muv-Luv and Muv-Luv Alternative. It starts off really slow and stupid but if you stick with it you'll get the payoff you deserve. Try not to spoil the plot twists.

Devil on the G sting (G-Senjou no Maou) has some pfun characters and a duel perspective story with two fairly unique MCs - if you just finished your first one I'd start there
