I've never done anything with digital currency, but have some extra time on my hands as of lately. Dogecoin seems like a good place to start, since there's supposedly a lot less risk involved than bitcoin.
As a complete beginner to coin mining, is Dogecoin a good place to start, or are there other crypto-currencies where I can get more bang for my buck?

first, do some research: make a list of all the places that will actually accept a cryptocurrency. no point in buying Dobbscoins if you can't use them for anything except gifts to other Dobbscoin users.

The big coins now are ETH (Ethereum) and I think the memecoin of the month is Digibyte or something along those lines. Heard it got integrated into some streamers minecraft server.

an average gaming pc will mine maybe half a dogecoin in a day. one dogecoin is worth about a third of a cent, so if you mine for a year straight you make about 1-2 dollars and spend maybe a hundred or two on electricity
mining is pretty much pointless unless you have a specialized RISC or whatever they're called
Unless you are one of the lucky ones who has a RX 480 8GB or two then you might make a bit of cash mining ethereum, but it won't last imo
