If you want something slower paced (but brilliantly written) try Monster.

If you want splatter, try Hellsing Ultimate. Depending on who you ask it can be considered either harsh horror or comedy, but it is definitely badass and fun.

Desert Punk is pretty good but leans more towards comedy/action. Kinda like the Fallout games.

Hellsing Ultimate is super over the top with gore and guns and rape so it's pretty fun if you're not squeemish

Jin-Roh: The Wolf Brigade (movie, not a series) is cool if you like alternate world and military history. Story is pretty political in regards to conspiracies within government agencies and has some well made action scenes sprinkled in. Lots of gun porn.

Trigun is similar to Desert Punk (some comedy, Fallout-esque) but with more feels

Samurai Champloo is damn good, made by same people who made Cowboy Bebop. Similar in that it's a lot of different individual story arcs, but in Champloo they are mostly 2-3 episode arcs vs Bebop's one story per ep.
