Just something I like. I haven't really seen enough anime to know what genres I like (or what the genres are).
Generally speaking though, I'm looking for something where the characters feel authentic and are well written.
Generally not a fan of action for action's sake, I want it to be important to the story.

Ghost in the Shell is excellent in terms of writing and character presentation. Watch the original movie and the series (Stand Alone Complex) and ignore the Arise/live action bullshit. Keep up with the dialogue. I hope you enjoy it.
I also recommend giving Psycho Pass another chance. It's a dystopian/sci-fi/crime drama about a concept that I think is very interesting (psychological crime coefficients) and there really is only action when there needs to be (i.e. the task force taking down the bad guy).

I dunno, I felt like Psycho-Pass was trying a bit too hard with all the cool terminology. Also the way concepts were introduced by way of the protagonist (who has supposedly been trained) not knowing anything and having others explain them to her felt a bit clumsy.
And also the fact that she's getting so shocked by these things that are supposed to be standard in her world is a bit unrealistic.
Might give it another go but not sure.

try Samurai X (specially the OVAs) and Samurai Champloo, both are 'must watch' imho

try Planetes and Great Teacher Onizuka, the characters feel 'real' and they get you hooked within the first minutes

for something more artsy and experimental try Kaiba or Mononoke -not princess mononoke-, for sportsy watch One Outs and Kuroko

try with The Melancholy of Haruhi Suzumiya (similar in the sense of the characters plus both have 2 seasons and a movie) and maybe Serial Experiments Lain

The ef series. The second one is better than the first, but all in all It's a really introspective romance series with an interesting visual style.
