Easy mode would be to reinstall Cyanogen mod, any rom does not have GApps by default. This would delete everything of course.

IIRC, you can do this by Clearing everything and formatting the partition in recovery.

You don't have to flash gapps in the first place. Every custom ROM comes without gapps package. So basically what you need to do is clean install your ROM. Clean install-wipe system-data-cache. Just don't flash gapps this time. Download and install f-droid to get started.
