Been a while since I read it but Lucifer and the Biscuit hammer had a regular guy who didn't like hanging out with people with him developing as a bad ass.

However Satoshi Mizukami's stories all have major slice of life elements even if they're action adventures.

Kangerou Daze has a pretty relatable neet guy who gets thrown into shit.
