Carcassone is my favorite. Great game with simple rules and that encourages strategy and downplays luck. Its best feature is that all they way until the end every player feels relevant.
Pandemic is also loads of fun. Its a cooperative game where all the players try to beat the "AI" who is a deck of cards". It has a pretty scary rulebook though, which is unfortunate because the rules are actually quite simple.
Stratego is a very old game that is high strategy and only 2 players, so its nice if you dont have a party to play with.
Risk is a great classic but im sure you've played it.
