The best option right now would be to read the visual novel (you should have done that first, but doesn't matter) to get the full experience and not just a butchered adaptation.
But, if you don't feel like it, you should watch only UBW (TV), the movie is not as good and the old FSN anime is horrible.
You can watch Unlimited Blade Works TV by ufotable and wait for the Heaven's Feel movies or you can play the VN.
imo F/Z is miles better than UBW but that's mostly because UBW's story is pants-on-head retarded.

The UBW anime was specifically made with the intention of connecting to Fate/Zero for anime-only watchers. Go with that one.

The original Fate/stay night anime was a poor adaptation made by a different studio that tried to cram in all three routes of the VN and did so poorly. It is completely unnecessary to watch - UBW is intended to "replace" it as an anime.
So if you have no interest in the VN:
