That's essentially it. Watch whichever interests you, or both. Most people will tell you they like Ultimate better.

Yep, Ultimate is more faithful to the manga.

The original has an amazing OST so watch that first, then watch Ultimate.

kinda of but the original fma has cool stuff that brotherhood doesn't have (brotherhood series seemed rushed to me) and ultimate has most of the stuff from the original series plus new characters and a different ending since the one in the original was pretty boring

here's a little tip, if you're watching ultimate, there's a scene at the end of one of the episodes where one of the characters blabs for 10+ minutes about literally nothing, so skip that.
