Literally any Ghibli film. I recommend Laputa Castle in the Sky and Spirited Away. Watch Only Yesterday too, it'll give you a good idea of how great an adult drama can be in animated form.

I got my friends started on anime with Fate:Zero. Battle Royale premise, with magic and heroic/antiheroic historical figures, so there's a good bit of action/fights, but there's also ideological/moral conflicts between characters, both from the present and the past. Despite what your friends might tell you, you 100% do not need to watch/read anything else in the Fate universe before Zero, it gives you what you need to know.

Spirited Away and Princess Mononoke are probably the most recommended Ghibli titles, and My Neighbor Totoro is probably the most recognizable.
However, if you want something really easy and slow that will give you time to appreciate Ghibli's incredible attention to detail, I recommend Arrietty, which was dubbed for English release in 2010 as "The Secret World of Arrietty".
If you like over-the-top action movies, watch Black Lagoon. It's also a good starting point if you don't like reading subtitles, since it's one of the very few shows out there where the dub is better than the original Japanese.

Some people claim ecchi is just really softcore hentai, but it's more like the worst kind of raunchy comedy films, except it's shitty anime aimed at permavirgin neckbeards, so it's even worse.

Softcore porn basically. Lots of sexual content, but nothing explicitly pornographic. So bare breasts, heavy petting, etc, but no on-screen genitals. Ecchi can range from mild in sexual content (like many seasonal harem shows) to very heavy (Kiss x Sis, High School DxD etc).
Casuals often over-apply the term, calling any show with sexual fanservice of any kind "ecchi," because prudes cannot tolerate any kind of sexuality in their entertainment.
