As someone who doesn't know shit about the franchise, what should I start with to get into it?
The games' stories are not connected (with a few exceptions) so you can start with pretty much any of them
(I would recommend starting with VI)

Starting with 1, 4, 6, 7, 9, 10, 12, or 13 are all decent places to start, I think. Those are all easy to get into and the "big" games that most people would flock to as the best in the series (besides 1, 12, and 13 maybe) although the further back you go, the more okay you'll have to be with earlier graphics.
You can play the PSP remake of 1 with heavily improved graphics without any loss of quality though. It even adds a bunch of bonus content at the end-game.
There's also the 3DS remake of 4, if you want to play it with 3D models and such instead of 2D sprites.
I believe 7 has an HD mod if you plan to play it on an emulator, so Google that, if you can't handle the graphics, I guess.
Anyway, for my own opinion, I'd recommend 9, 12, or 13. Despite all the criticism 12 and especially 13 get, I absolutely adore them, but maybe most of that adoration comes from the soundtracks of both. So definitely give all three of those a chance at least.
Also, like >>181350 said, none of the main Final Fantasy games are connected, so you really can just start wherever you want, but do know that 4, 7, 10, 12, and 13 do have sequel games, they're just not mainline games.

You can start literally anywhere, OP. I started with 10, then 7-9, Final Fantasy Tactics (for PSX and one of the best games of the series), 1, 2, 4, 12 (which was a mistake), 6, 13 (even bigger mistake), 5, then 3.
That's not a suggested order; just to show that there's no real order to play them in. You could even start with FFXV and work your way backwards. Doesn't matter.
Be sure not to miss some other great SNES Squaresoft games. Chrono Trigger, Chrono Cross, and Secret of Evermore are particularly fantastic, with Chrono Trigger being an absolute must play.
