Hello, hello. I have a galaxy S5 with display problems. I'll send it back to the online shop I bought it from, they'll send me back a replacement. I want to erase all data before I send it to them, I can do a factory reset but I don't want to, in case it fixes the problem before they can reproduce it themselves. I turned the developer's tools option on so when I plug it in to my computer I can copy everything from the phone to the PC. Then I can delete folders from the phone but I don't know which folders to delete, which to leave, i.e. I'll delete DCIM folder but where do the downloaded photos go? Where does the notepad save documents, etc etc. Is there a safe way to backup the phone data, delete evrything except minimum required to run the phone, and restore everything back on to the new phone.
You can do this with recovery, but you'll need to root your phone , and it may break the guarantee.

You mean root -> use "recovery" to back up -> unroot, then new phone -> root -> restore? Does "recovery" delete everything as well after the backup before sending the phone over?

Recovery mode is something where you can back up , restore , wipe cache, install a new "OS" etc ... I recommend to install MobileUncleTools for recovery, but, as i said, just Google it you will find tutorials adapted to tour device
